My Favourite Vanila Cupcake Recipe

This is the recipe we use for all our vanila cupcakes

VANILLA CUP CAKES

Makes 24

Cakes

225g organic butter

225g organic castor sugar

4 organic eggs

225g organic self raising flour

1 tsp baking powder

1 tsp good vanilla essence

Topping

50g icing sugar

Few drops of a good natural strawberry essence or your favourite flavour

One drop natural red colouring to the desired pink colour

Decorations

METHOD

  1. Pre heat oven to 160C  Gas Mark 4
  2. Measure all the ingredients into a large bowl and beat well until thoroughly blended for 2 minutes
  3. Divide mixture using an ice cream scoop into the cases
  4. Bake for 25 minutes until well risen and the cakes spring back when lightly pressed.
  5. Leave to cool
  6. Make up icing and decorate tops of cake.
